    First Shot At Banana Bread

    For any of you that follow my blog or know me pretty well, there’s one fruit I can’t stand, it’s banana. I ate a rotten one or something when I was a kid, and even though my mother says it never happened, I’ve been hard pressed to even smell banana. But the kids like bananas and I try to be a good example, so this year I’ve started to eat bananas. I usually put them in my morning fruit shakes (cause I can mask the nasty taste with something else), but I decided to try out some banana bread…

    So I wanted to make it semi-healthy, so I opted for the whole wheat version. I also substituted Splenda for the sugar, as that just seemed like a ton of empty calories. I skipped the nuts because my family hates them (I love them though). I wanted to make it so I wouldn’t feel like I needed an Orovo detox at the end of it, as sometimes I do with sweeter bread.

    So this is the recipie I tried off of Cooks.com:

    WHOLE WHEAT SPICY BANANA BREAD

    1/2 c. butter
    1 c. sugar
    2 eggs, lightly beaten
    1 c. mashed ripe bananas (about 3)
    1 c. all-purpose flour, unsifted
    1/2 tsp. salt
    1 tsp. soda
    1 c. whole wheat flour, unsifted
    1/3 c. hot water
    1/2 tsp. cinnamon
    1/4 tsp. allspice
    1/4 tsp. nutmeg
    3/4 c. chopped walnuts

    Melt butter and blend in sugar. Mix in beaten eggs and mashed banana, blending until smooth. In a bowl, stir together all-purpose flour, salt, soda and whole wheat flour until thoroughly blended. Add dry ingredients alternately with hot water. Stir in chopped nuts and spices. Spoon batter into a greased 9×5 inch loaf pan.

    Bake in a 325 degree oven for about 1 hour and 10 minutes, until bread begins to pull away from sides of pan and a wooden skewer inserted in center comes out clean. Let cool in pan for 10 minutes; then turn out onto a rack to cool completely.

    Makes 1 loaf.

    It was pretty good. Strangely I didn’t think it was sweet enough, but my husband said it was perfect (I rarely receive such a compliment). And honey, if you actually read this, you didn’t know Splenda was in it before now and you liked it, so I don’t want to hear about how you suddenly don’t like it because of that!

    Anyhow, this was a good use of my left over bananas, even though I still hate the horrid, rancid fruit!
